As our food budgets tighten, we all need to learn how to eat well without depriving ourselves. Here are a few of my delicious adulting tips and life hacks that I’ve used since college when my budget is low, but I still want that amazing meal-after-glow.
Every breakfast, lunch, or dinner should feed me twice. Yes — even breakfast. When I make breakfast, I make enough for the next day or lunch. The same rule applies to eating out — if I get a “country breakfast,” something is going home — normally the carbs. Pro Tip: French toast and breakfast pastries are good the next day, but pancakes and grits don’t reheat well.
Beans are your friend. They can make hearty soups, salads, and great plant-based burgers. And don’t get me started on black bean brownies. They need to be refrigerated, but OMG — they are decadent. I’m learning about lentils, and I like it. Lentil chili is becoming a favorite. Check out my Jar Salad Jamboree for some great ideas. Pro Tip: Sanitize and reuse glass jars for cheaper and more eco-friendly food containers.
